Another prestige cuvée Méthode Cap Classique, this time from Elgin producer Charles Fox. Called Cipher, it’s a blend of 50% Chardonnay and 50% Pinot Noir, it spent 42 months on the lees and costs R450 a bottle.

It’s a somewhat peculiar offering with a pronounced apple character – both yellow and red – plus a definite oxidative quality. The acidity appears moderate, the bubble soft. If you like your bubbly rich and full, then you’ll like this.
