Mum’s birthday yesterday so Billecart-Salmon Champagne Cuvée Nicolas François Billecart Brut 1995 from magnum with cocktail sausages from the Super Meat Market in Main Road, Kenilworth. The nose showed a pronounced biscuit character and those hard-to-describe savoury notes that come with bottle age but the palate was sensational: citrus, green apple, a touch of brioche, nuttiness, fine mousse, riveting acidity. Not just complex but intricate, each sip revealing a different facet of the wine. Score: 17.5/20.
