Tyrell Myburgh of Joostenberg in Paarl has an on-going programme of research and development, the resulting wines bottled under the Small Batch Collection label and Spaanse Spek 2011 is another thought-provoking iteration.

The idea was to see what effect extended barrel maturation would have on his regular white blend known as Fairhead. The wine which includes Roussanne, Chenin Blanc and Viognier was spontaneously fermented in seasoned oak, blended after 10 months and then returned to barrel for a further three and a half years.

It shows dried peach and apricot, spice and vanilla plus a definite salted nuts quality. It’s not for everyday drinking but you do want to try it at least once. Price: R200 a bottle.
