Laborie Méthode Cap Classique Blanc de Blancs 2007

By , 14 June 2011

“Congratulations on your daughter’s second birthday,” said a friend. “You’ve  managed to get her this far, all limbs intact.” An excuse for a small celebration but what bubbly to serve? I found myself at the weekly Laborie Lazy Days Market on Saturday and duly stocked up on this Paarl winery’s MCC Blanc de Blancs 2007.

It spent 36 months on the lees and shows honeyed development on the nose before a palate that is rich and full, the mousse particularly frothy and acidity relatively soft. Somewhat four-square but not overpriced at R85 a bottle from the tasting room.
