A study in terroir.

Same variety, same producer, different sites – it’s always fascinating to taste the two examples of Sauvignon Blanc from Robertson property Springfield, namely Life from Stone and Special Cuvée, in this instance the 2016s, some three years on from vintage.

Springfield Life from Stone Sauvignon Blanc 2016
From a vineyard planted on rocky quartz. A hint of reduction before snap pea, pear, white peach, lime and pineapple. Relatively lean with really punchy acidity and a pithy finish. Still remarkably youthful – good for a while yet. Alc : 12.5 %, RS: 1.4 g/l, pH : 3.5 and TA : 7.2 g/l.

Springfield Special Cuvée Sauvignon Blanc 2016
From a vineyard planted on sandy alluvial soil. Intense khakibos to go with white peach, grapefruit and green melon plus a hint of honey. Rich and full with lovely palate weight and a creamy texture. No longer entirely primary – drink now. Alc: 13 % vol, RS: 1.6 g/l, pH : 3.65 and TA: 6.5 g/l.

    Would be intersting to find out if the two wines were treated differently in the winery.

    Pretty much exactly the same treatment in the cellar: Alcoholic fermentation lasted 21 days in the case of Life from Stone, 18 days in the case off Special Cuvee, then both spent 100 days on the lees before light fining and filtration.
