Bloemcool Rosyntjiesop 2017

Rosyntjiesop under Fairview’s special project Bloemcool is quite extraordinary. A blend of 73% Chenin Blanc and 27% Muscat Blanc , grapes were dried on straw for two weeks longer than winemaker Anthony de Jager usually would for Fairviews’s well-established straw wine known as La Beryl Blanc.

Fermentation took place in a 34-litre glass demijohn, the process taking just under three years to complete while the analysis is extreme, with alcohol being 4.75%, residual sugar 488g/l, total acidity 7.9g/l and pH 3.57.

The nose shows predominantly shows raisin and hay but also subtle notes of apricot, orange, fynbos and toffee while the palate is entirely decadent – super-concentrated and smooth textured, the acidity very much contained.  Price: R1,250 per 375ml bottle.
