New ocean-inspired restaurant to open at the Mount Nelson

Decor inspired by kelp forests.

Cape Town hotel Mount Nelson has announced the launch of Amura by chef Ángel León, opening December 2025. León is celebrated for his pioneering approach to marine gastronomy. This will be his first restaurant outside Spain and his African debut.

León, whose Andalusian flagship Aponiente holds three Michelin stars and its sibling restaurant Alevante two, has transformed little-used ocean species – such as phytoplankton and sea rice – into haute cuisine. Amura will continue this ethos in Cape Town, highlighting South African seafood, seasonal produce, and indigenous spices while drawing on Mediterranean culinary traditions. Guests can expect à la carte and tasting menus featuring unsung fish, kelp, and coastal botanicals, prepared with techniques including fermentation and open-fire cooking.

Designed by South African interior architect Tristan du Plessis, the restaurant’s interiors are inspired by Cape kelp forests, creating an immersive marine environment.
