Intent on acquiring a property appropriate to the dedicated production of Methode Cap Classique, Charles and Zelda Fox examined many wine-growing areas before settling on a fruit farm in Elgin called Furneaux in 2005. They subsequently planted a total of 9ha of vineyard consisting of Chardonnay, Pinot Meunier and Pinot Noir while also employing the services of consultant Nicolas Follet. “The property has many variations of soil and aspects. We are extremely lucky to get the quality of grapes that we do from just one location,” says Follet.

Charles Fox Reserve Brut NV
Price: R185
Approximately a third each of Chardonnay, Pinot Meunier and Pinot Noir; 50% reserve wine; 30 months on the lees. Citrus, apple and brioche on the nose. Lovely richness and depth on the palate, a creamy mousse and savoury finish.

Charles Fox Reserve Rosé NV
Price: R180
75% Pinot Noir, rest Chardonnay and Pinot Meunier. 30 months on the lees. Pale orange in colour, the nose shows raspberry, cherry and red apple. The palate has great poise with pure fruit, bright acidity and a fine mousse. Super-elegant.

Price: R260
45% Pinot Meunier, rest Chardonnay and Pinot Noir. Pear, white peach, green apple and fresh herbs on the nose. The palate has an ephemeral quality being light-bodied with lively acidity and a fine mousse.

Charles Fox Vintage Brut Rosé 2012
50% Pinot Noir (including 6% red wine), 40 months on the lees. Red fruit plus some yeasty complexity on the nose. Very rich on the palate with a creamy mousse and a gently savoury finish – a bit more foursquare than its stablemates.

40% oaked, 36 months on the lees. An alluring nose with a top note of blossom before citrus, apple and white peach plus a hint of almond. The palate shows pure fruit to go with an acidity that is super-fresh but not angular or aggressive while the mousse is soft but persistent. Very elegant and precise – lovely composure and detail.

Price: R495
50:50 Chardonnay and Pinot Noir; 54 months on the lees. A rather shy nose with hints of citrus and apple while the palate is rich and broad with well-integrated acidity and a soft mousse.
