Eagles’ Nest Sauvignon Blanc 2021

Whereas Eagles’ Nest used to buy in grapes from Durbanville and Darling to make its Sauvignon Blanc, the 2021 vintage is W.O. Constantia with the result that the property now joins the ward’s Sauvignon Blanc Route.

Three components were involved, the first spontaneously fermented in older 500-litre barrels, the second inoculated and then transferred to oak and the third tank-fermented, maturation lasting six months.

Top notes of floral perfume and guava precede peach, grapefruit and pineapple on the nose while the palate is well measured – round and textured with nicely integrated acidity. Not too herbaceous or severe. Price: R175 a bottle.
