Waterkloof Sauvignon Blanc 2015

Paul Boutinot, owner of Waterkloof situated on the Schapenberg outside Somerset West, is convinced that his flagship Sauvignon Blanc can stand next to the very best of Sancerre and it’s nothing if not a “terroir wine”.
The 2015, the first vintage that the property was certified biodynamic, is now out and is as stern and intellectually demanding as ever. From a single vineyard now some 20 years old, juice was fermented spontaneously in old 600-litre barrels and maturation lasted nine months.
The nose is immensely complex with notes of green apple, white peach, some sea-breeze, fynbos and a little white pepper. There’s great fruit concentration on the palate ensuring that the vibrant acidity does not appear too hard or angular and the finish is long and savoury. Only available to Waterkloof wine club members at R155 a bottle.
