Sauvage La Bri Blanc de Blancs 2011

Irene Waller has a bit of experience with Méthode Cap Classique having worked at Graham Beck before becoming GM and winemaker at Franschhoek property La Bri and it shows when you taste her Sauvage La Bri Blanc de Blancs 2011 (R350 a bottle).
From a Chardonnay vineyard planted in 1991, the wine spent two months in older barrels prior to second fermentation, then five years on the lees before being disgorged without dosage. The nose shows subtle notes of citrus and apple plus some yeasty character while the palate is lean in the best sense with bracing acidity to go with a fine and persistent mousse, the finish bone-dry. Sophisticated stuff. Price: R350 a bottle.
