Grapes for Cathy Marshall’s Chenin Blanc Fermented In Clay 2021 come mainly from Elgin but include a portion from Bottelary Hills in Stellenbosch. Winemaking involved spontaneous fermentation in clay amphorae while maturation lasted nine months, a fraction completing this in oak barrels.

Pear, yellow peach and some earthiness on the nose while the palate is rich and broad with a savoury finish. With impressive fruit density, this packs quite a punch (alcohol is 14%). Price: R320 a bottle.
